Southwest Spaghetti Squash

This is a GREAT dish, easy and delicious! I added steamed broccoli and some stir fried mushrooms and it was a complete meal. For those who eat meat you can add some roasted chicken or just have a vegetarian night.

 SOUTHWEST SPAGHETTI SQUASH

 1 spaghetti squash

2 tbs extra-virgin olive oil

1/2 red onion, chopped

3 garlic cloves, minced

1 red bell pepper, chopped

1 tbs ground cumin

1 tbs oregano

1 tbs chili powder

1 can black beans (drained and rinsed)

1 cup frozen corn, thawed

coarse salt and freshly ground pepper

1/2 cup freshly torn cilantro

1 lime

 Preheat oven to 375 degrees

Roast squash on a cookie sheet for 50 minutes. Let cool another 30 minutes. Scrape out the seeds and discard then scrape out the spaghetti.

 Heat oil in medium skillet. Add the onion, garlic, red bell pepper.

Saute 2 minutes.

Add cumin, oregano, chili powder and good pinch of salt and pepper.

Saute another minute.

Add the beans, corn and cilantro. Stir to combine.

Squeeze in the lime juice and give one last stir.

Add spaghetti to the bean mixture and stir to combine.

Taste and season accordingly.

Switch oven to broil.

Stuff each squash half with the mixture and place under broiler for 5 minutes, to heat.

Garnish with cilantro.

Peaks with Snow

As we drove thru Zion National Park, everywhere we looked it was gorgeous!  Peaks popped up with snow on them, then others would take their place, it was a wonderful day!

Our drive thru Zion National Park was beautiful, the gorgeous blue sky, the snow touched red rock and the majestic mountains were awe inspiring!  Here at the Court of the Patriarchs we were surrounded by these unique rocky mountains.

He Saw Me

As we drove thru Zion National Park we saw a few deer, so I took this photo of this beautiful deer looking for food in the snow, then he looked up and saw me!

There had been a snow storm the week before we went to Zion National Park, now the snow was sitting below or on the pine trees, such a pretty contrast!

As we drove thru Zion National Park we came across some Wild Turkeys.  I think Turkeys are very interesting birds, not as pretty as Peacocks, but they are similar and have their own beauty.

Sun, Tree, Reflection

We took a wonderful drive thru part of Zion National Park.  I LOVED this tree, there by itself with the red rocks behind.  Zion National Park is a beautiful park to drive thru, each turn is a new vista.

I have been to Zion National Park many times but never in the winter.  This time it was so beautiful with the contrasting white snow and red rock!

Frozen Waterfall

As we drove thru Zion National Park we saw this frozen waterfall.  The water had come down the mountain and just frozen.  Even though this photo is beautiful with the blue sky and mountain, now you know that it was very cold!

Snowy Fields

During the Winter, the fields are at a stand still, covered with snow, waiting for the warmth of the Spring sun that will melt the snow and awaken the ground.  On a trip to Southern Utah this past week-end, for a funeral of a dear friend, we were reminded of this.

On our way to Southern Utah, this past week-end we saw a lot of snow. Soon, there was a train next to us, so we pretended we were racing it. Of course, they didn’t know about the race, but we did win.

Love ~ Swans

While strolling around this lake in 2008, I took photos of these Swans and one of them really showed off.  Going to the other swan, they made this heart shape just for me!  Swans, who mate for life, make this heart shape when they are courting.  I LOVE IT!!

Freedom Trail

Last Fall, while visiting Boston, we walked the 2 1/2 mile Freedom Walk.  It is a physical brick line that passes many historic sites.  It was educational, inspiring and wonderful, as we gained a greater appreciation for our country.  I highly recommend the Freedom Trail if you are ever in Boston!

We went out the other evening and the snow started coming down and it didn’t stop until morning!  Not too many people were out in the bitter cold, but we were bundled up and we had a fun time!

USS Constitution

The USS Constitution is the world’s oldest commissioned naval vessel afloat, launching in 1797.  In 2016 we were able to walk around the USS Constitution while she is in dry dock and as skilled people work to restore her.  As we walked around I thought, if only she could speak, what stories she could tell!

Bunker Hill Monument

Last year as we walked along the Freedom Trail in Boston, we crossed a bridge and from there we had a nice view of the Bunker Hill Monument across Boston Harbor.  It was here that the battle of Bunker Hill took place on June 17, 1775.
